Imported from Argentina in the 1930's for their fur,
these giant swamp rats escaped into the wild and are now devouring the
roots of wetland plants and transforming the Bayou into a wasteland. A
solution has been found, with several tasty recipes.
Three guys,
Jeff Springer, Quinn Costello, and Chris Metzler are making a
documentary called "Rodents of Unusual Size", about the thousands of
20-pound swamp rats that are eating away the fragile coastal wetlands of
Louisiana.

ReplyDeleteSausage and similar are a confession of failure in meat preparation, for many if not most cuts.
After I married a woman of Czech-German-Hungarian background, with an active circle of Mittel-Europa aunts, all substantial women who knew how to cook, I learned better.
The taste test should have included at least a BBQ, a gulasch-suppe, a roasted whole animal, pan fried bits with various herb and spice sauces, und so weiter.
No doubt some redoubtable English, Scottish, Chinese, Korean and other Aunties could inform your three young gents of how to cook fresh good meat.
Isn't there some South American country that deep fries the whole of a Guinea Pig?
